I love everything about food! Everything from the gracious curve of the cashew, the gorgeous red hue of a perfectly ripe tomato, the delicate crunch of artisan bread and the beautiful creations a not so attractive avocado can inspire. The mere act of combining  colors, textures and flavors is a work of art every time a meal is  created.

However, despite my current enthusiasm, food and I did not always get along. In my twenties I didn’t eat enough and in my thirties I used food for comfort in times of stress, boredom and loneliness. I remember the days of drinking diet coke for breakfast at my desk and the nights I craved ice cream so intensely I just had to have it. I really spent most of my young adult life dieting and feeling deprived or overindulging and feeling like a failure. But with time, comes knowledge and as in any relationship, I learned from my mistakes.

At age 18 I became a strict vegetarian and at 36, a strict vegan. This evolution was perfect for me as it forced me to investigate everything I was eating and to learn about nutrition. I started reading labels and learning  where my food came from just to avoid eating anything living, land or sea. Today, I can say with absolute certainty that following a whole foods plant-based diet erased all of the food drama from previous years. My cravings stopped, weight fell off, medical issues disappeared or improved and I felt more physically and spiritually balanced than ever before. Food and I now have a mutual respect for one another and I love inspiring others to feel the same!

The tough thing about food is that we can’t avoid it. We need it everyday to survive so we better learn how to get along. I believe  that anyone, whether herbivore or omnivore, can break the cycle of deprivation and overindulgence by incorporating a menu of  plant-based whole foods into their kitchen. The beauty of health coaching is that it also embraces a deeper examination of your physical movement, spiritual stance, relationships, career and personal self to see how they affect your overall wellness.

If you’re ready to reclaim your health with plant-based nutrition and fall in love with life again (or for the first time), I’m here to help you do it!

Kindly yours, Carolyn
